Hi, it’s me !

My name is Hélène, a passionate vegan chef with a love for creating plant-based, artisanal delights.

My journey into veganism began for health reasons when I decided to reduce animal protein in my diet after learning about its impact on long-term well-being. Science backs this up: plant-based diets are linked to reduced risks of heart disease, better digestion, and overall vitality. But it was my natural empathy and deep compassion for animals that ultimately led me to fully embrace veganism.

This life shift inspired me to leave my restaurant job and start my own business in 2018. That same year, I made the leap and moved to Estonia to start this exciting new chapter.

 

From France to the world

Born in Nancy and raised in the sunny South-East of France, I’ve always had a curious palate and a love for experimenting. As a child, I’d rush home after school to try recipes from magazines (yes, magazines—blogs weren’t a thing yet! 😄).

Over the years, my love for cooking transformed into a career spanning more than a decade.

Travel as inspiration

Between two busy restaurant seasons, when I was working in the kitchen, I took every opportunity to explore the world.

While countries like Vietnam, Italy, Spain, and South India wowed me with their vibrant and diverse cuisines, I found inspiration for lifestyle and culture in places like Iceland, Australia, Myanmar, and many other countries that enriched me on every level.

Each trip expanded my horizons, fueled my creativity, and inspired me to incorporate diverse influences into my plant-based creations.

Hobbies that spark joy

Living in Estonia has introduced me to some unexpected passions, like karaoke—which, let me tell you, is a thing here! Who knew I’d end up belting out songs in an Estonian bar one day ?

I’ve also taken up pottery, a calming art that connects me to myself, and I’ve loved drawing since childhood. Forest walks are another favorite and kayak during the 5th season, offering a peaceful escape.

And of course, nothing makes me happier than sharing moments with friends over a beautifully curated vegan cheese platter, paired with a good glass of wine, and lots of laughter.

My dream : A place for connection

Since I was 16, I’ve dreamed of owning a countryside home—a haven where I could welcome guests to a cozy bed-and-breakfast and table d’hôte (a French concept of a communal meal where everyone shares a set menu, emphasizing connection and togetherness).

This vision includes a permaculture garden, a medicinal herb corner (I’m fascinated by the power of plants), and a sanctuary for rescued animals to live their lives in peace. I’d also love to host workshops for schoolchildren, teaching them the importance of soil, food, and reconnecting with the earth from a young age.

Beyond food, I imagine this space as a hub for creativity and wellness—offering plant-based cooking classes, yoga, breathwork, art workshops, and musical events. A place for sharing, unity, and inspiration.

And it’s thanks to Hélène’s Delicacies—my handcrafted vegan cheeses—that I’m working towards this dream. Every cheese I make brings me a step closer to creating this safe and welcoming space.
